The 28-year-old Englishman, who never trailed the final match, fended off a rally to take down Kim 4 & 3 in the 36-hole finale at the Fince Cortesin golf course in Spain.
Apart from taking the top purse of about 670,000 pounds, the win moved Fisher into a career-best 17th spot in the world.
It also vaulted last year's European Open winner to fourth on the Order of Merit on the current season
Kim, aiming to become the youngest winner in tournament history, managed to slash the deficit to 2-down following a 15-foot birdie putt on the 24th.
But the 24-year-old American failed to sustain.
Despite the setback, Kim improved his chances of securing a spot in the season-ending Dubai World Championship.
In the consolation match, Robert Allenby of Australia, eagled the first extra hole to defeat Cabrera.
